Honey and butter, Deep dish pumpkin cheesecake Pie

It’s Thanksgiving season and I’m in the mood for all things pumpkin. Packed with beta carotene and other nutritiousĀ things, pumpkin is a nice excuse to make something naughty.

A deep dish pie pan makes this a tall, grand pie. Use a 9×13 in pan to make into bars.

This pie is a combination of cheesecake and pumpkin pie. It has a layer of each, and the pumpkin layer is less dense than a traditional pumpkin pie.

Deep Dish Pumpkin Cheesecake Pie

For crust:
1 3/4 cup graham cracker crumbs (about 1 1/2 packages)
1/2 cup sugar
1/2 cup/ 1 stick butter, melted

For cream cheese layer:
2 eggs, room temperature
3/4 cup sugar
1 package (8 oz) cream cheese, room temperature
1 tsp vanilla extract

For pumpkin layer:
1 pkg. Knox gelatin
1/4 cup cold water
One 15 oz can pumpkin
3 egg yolks
1/2 cup sugar
1/2 cup milk
1/2 tsp salt
1 TB cinnamon

2 egg whites
3 TB sugar

For crust:
Blend together cracker crumbs, sugar and butter. Press into a deep dish pie pan or a 13×9 inch baking pan.

For cream cheese layer:
Beat 2 eggs, 3/4 cup sugar, cream cheese and vanilla extract with mixer until creamy. Spread over crust and bake 350 degrees for 50 minutes for a deep dish pie pan and 30 minutes for a 13x9inch baking pan. The mixture should be set but the center still a little jiggly. Cool.

For pumpkin layer:
Dissolve gelatin in water, and set aside.
Mix pumpkin, egg yolks, 1/2 cup sugar, milk, salt, and cinnamon, cook over low heat, stirring constantly until thick, about 8-10 minutes. Remove from heat, add gelatin, blend well. Cool.

Beat 2 egg whites with 3 TB sugar until stiff. Fold into pumpkin mixture in two additions, pour over crust. Chill overnight.

    ya know, I just made PW’s cheesecake and I never took one sginle picture! What a shame!!! Oh well, making another this week.. Your pics are wonderful and that cake look delish! At first, I thought it was chocolate chip. Wouldn’t that be fabulous?? : D
