
We’re on the verge of summer. I realize this. Last night, I flung my doors to the evening breeze, lounging on the couch and enjoying the latest episode of Grey’s Anatomy…
A mug of hot chocolate was the last thing on my mind. However, I hear many parts of the country are recovering from tons of rain and flooding. And I know that if I were in their shoes, I would want some hot chocolate. Use the best cocoa powder you can find for this recipe, and a cute mug helps, too. The amount of sugar and cocoa powder can be adjusted to your taste. Just start with the smaller amount and add more to adjust.

The blend of coconut and chocolate is wonderfully reminiscent of the passing winter and upcoming summer. This makes 4 servings, so cozy up with your family and friends and enjoy that evening breeze!
Macaroon Hot Chocolate
1/3 – 1/2 cup good quality unsweetened cocoa powder
1/2 cup + 2-3 TB more sugar
4 cups milk
1/2 tsp coconut extract
1/4 cup shredded coconut, lightly toasted
Mix the cocoa powder and sugar in a medium saucepan. Whisk together and turn the heat to medium. Add 1 cup of the milk and whisk until completely mixed. Add the rest of the milk and extract. Continue to heat the cocoa, stirring constantly with the whisk, until it starts to steam and small bubbles start to form on the edges. Immediately take off the heat and pour into 4 mugs. Top each with 1 TB of toasted coconut.
