I hope you like peanut butter. I hope you like it alot. The following sandies are like peanut butter badly disguised in cookie form. Naughty peanut butter.
I suppose you could call them Power Cookies- like a Power bar, but tastier. What do you think?
Nevermind, who am I kidding. These are Peanut Butter Cookies. Loud and clear.
Accept them. Just have a glass of milk or tea ready.
Peanut Butter Sandies
1 3/4 cup smooth peanut butter
1 cup flour
1 cup light brown sugar
Extra granulated sugar, for rolling
1. Preheat oven to 350.
2. In a large bowl, beat together sugar and peanut butter. Slowly add flour and mix until thoroughly combined.
3. Using your hands, roll about a tablespoons of dough together into a ball. Roll in granulated sugar and use a fork to make prints on the top of the cookies. Place on an ungreased cookie sheet and press slightly to flatten.
4. Bake 8 minutes or until the bottoms are lightly golden. Allow to cool on the sheet for about 5 minutes then carefully remove to wire racks to continue to cool. It is best to allow them to cool completely before eating, so they can set.
Makes about 2 dozen cookies
