Spinach Artichoke Dip

One day, I noticed my Bear with a melancholy expression on his face. “What’s wrong?” I inquired.
He sighed, “I think your blog is sad.”
“My blog is sad?” Well, this was news. I didn’t realize it even had feelings. “How come?”
“It has no spinach. I think it wants some spinach dip.”

At this point I’m thinking he’s had a little too much sun, but decided to oblige in the end. After all, who was I to judge? Maybe my blog does talk somehow try to communicate, but only can get through to bear-people. So here you go, blog (I wonder if it has a name), spinach and artichoke dip! Thanks for making me give you spinach, it was quite tasty!

Spinach Artichoke Dip

1 cup thawed chopped frozen spinach
1 1/2 cups thawed chopped frozen artichoke hearts
6 oz cream cheese
1/4 cup sour cream
1/4 cup mayonnaise
1/3 cup grated parmesan
1/2 tsp red pepper flakes
1/4 tsp salt
1/4 tsp garlic powder

Boil the spinach and artichokes in 1 cup warm water and drain. discard liquid. Heat cream cheese in microwave for about 45-60 seconds until hot and soft.

Blend all ingredients except the spinach and artichokes in a food processor until thoroughly combined. Add the spinach and artichokes and pulse about 20 times, until the veggies are diced, but not completely pureed. Serve warm with chips or fresh vegetables.
