I’m cautious when it comes to friends. Probably has to do with the traumatic events of my teenage years…

Like the time my junior high best friends Sarah and Amanda decided to stop talking to me when I moved out of the country. They cut all ties with me, for no apparent reason.Yeah, it hurt. And the time I heard my co-worker friends talking about me when they thought I wasn’t around. I was behind the wall. Heard every word. That stung a bit.

So I’m cautious. I realize good people are hard to find. Good people who will stick with you through the hard times, with no prospect of personal gain- well, those are keepers.

So I dedicate this post to my friend Rita. I know we haven’t been able to spend too much time together, but I honor your friendship! Thank you for being the first one to introduce yourself in class. Thank you for making those boring Bio lectures bearable. Thanks for dragging your poor boyfriend for an entire day to help me move my horribly heavy furniture. Thanks for patiently listening to me through my dramatic tears and undecipherable rantings. Thanks for always being yourself around me. Thanks for being my friend.

Last time we met up, I promised to post this recipe. I know it was a while ago, but I wanted to perfect it. Hope you like, hugs! 🙂

Creamy Cilantro Peanut Dressing
1/4 cup creamy peanut butter
1/4 cup seasoned rice vinegar
1/2 tsp garlic powder
1 tsp red pepper flakes
1 cup packed chopped cilantro
1/2 cup plain yogurt

Blend everything in a blender or food processor until well combined.
Serve with shredded lettuce, tomato, and red onions in a pita, lavash or flour tortillas, and enjoy with a good friend.

  • I love this recipe! I have made it twice (once with a thinner homemade yogurt) and again with the thick and creamy Greek yogurt. I used fat free yogurt both times and nearly a whole bunch of cilantro and each time it’s been totally delicious. A nearly guilt-free (peanut butter is good fats!) dip! I would like to feature this on my blog in the future!
