Mr. Bear and I are from opposite worlds. He is from the Europe and I have my roots in Asia. The unlikelihood of us being a couple is overshadowed by the odd understanding that somehow things work out. We definitely have our communication challenges, though…
Just yesterday we were having a lovely Sunday brunch out on the patio. The sun was shining, the birds were singing, and the table was spread with tasty brunch items. From where we were sitting we had a wonderful view of the green mountains overlooking the breezy valley.
As he forked open an English muffin, Mr. Bear let out a deep sigh.
“It’s so nice today, I wish every day could be like this…Just quiet and peaceful. Sometimes technology ruins everything.”
I scoffed, “What do you mean? No Twitter? No Netflix?! What are you thinking! “
He spread some jam onto the halved muffin. “No, seriously. Sometimes I hate technology. We should just quit here and become Jamish.”
“Uh, become what?”
“You know, those guys with no electricity who live in the old times.”
“Ohhh, you mean Amish!….Hahahha. Um, sorry, not happening.”
Seriously, how else am I supposed to carry on with my blog? The random things this guy comes up with! At least we compromised. We get to stay in the modern day world, and I make yummy things using modern electric appliances. Okay, we’re good.
This salad dressing is a tribute from each of our opposing worlds, a nice fusion between the Asian and European lands. The olive oil and lemon balances well with the rice vinegar, and the whole thing is rounded out with the faint sweetness from the honey. Enjoy it with your favorite salad topped with sliced cucumbers, tomatoes, olives, and feta cheese.
Lemon Honey Vinaigrette
2 TB fresh lemon juice
1/2 tsp lemon zest, optional
1/4 cup extra virgin olive oil
2 TB seasoned rice vinegar
1/4 tsp salt
1/2 tsp dried oregano
1/2 TB honey
5 turns fresh ground black pepper
Whisk all ingredients together in a medium bowl until emulsified.
Toss with fresh salad.

Great recipe. I was actually talking to my father about a recipe he made up that is similar but we couldn’t figure out the missing ingredient. He used it for an orzo and chicken salad. Looking at your recipe, I believe we were missing honey. Thanks for sharing! Now I could tell my dad.
