Caramel Popcorn

Honey and Butter Caramel Popcorn

Today I claim my right to pretend that I’m ten years old.

Because when you’re ten, no one looks at you funny when you eatΒ an entire bowl of caramel popcorn in one sitting. I swear, I’m ten, okay? Just for today.


Caramel Popcorn

1 tsp vegetable oil
1/2 cup light corn syrup
3/4 cup light brown sugar
1/4 cup water
1/2 tsp salt
1/2 tsp vanilla extract
1 bag microwave popcorn

Combine the oil, corn syrup, brown sugar, water and salt in a small saucepan over medium heat. Bring the mixture to 300F. When the candy reaches about 275, prepare the popcorn according to package instructions.Β  When the candy reaches 300F, add the vanilla and remove from heat. Pour the popcorn into a large bowl and pour the candy on top. Stir to coat evenly. Pour onto wax paper and spread it around to cool, then break into bite sized pieces. Store in a sealed container.

    We just made a batch for a potluck. I’m afraid it might not make it until this evening, the kids and I both love it so much! We made stovetop popcorn, and 3oz of kernels made about the right amount of popcorn for this syrup recipe.
